Sometimes, I love a good finishing sauce or an accompaniment that really sets a dish apart. We were having Homemade Flatbread the other night {HERE} and I knew that with the homemade bread, I wanted a little something extra to top it off. I had a few bunches of green onions in the refrigerator and decided it would be fun to use them in a Garlic & Green Onion Pesto sauce for the top of my bread.
Since it is not really basil season yet, I wanted to try a twist on a pesto and it came out so wonderfully. Kevin has been eating this Garlic & Green Onion Pesto all week long with different breads – even just plain sandwich bread. In fact, I had to tell him to stop eating it so I would have enough to use for the photographs in this article.
What is in the Garlic & Green Onion Pesto?
Like the name, the biggest flavors in my twist on Pesto will be the garlic and the green onions. Raw garlic is used, which really makes the flavor standout and the bulk of the green onion is used as well. In addition to those two ingredients, I wanted to make this as close to a traditional basil pesto as possible so I used extra virgin olive oil, pine nuts and finely grated parmesan cheese. I added a little lemon, parsley, red wine vinegar and some sea salt and fresh cracked pepper. That is it.
What does it taste like?
If you are a garlic and onion lover, then you will love this Garlic & Green Onion Pesto. It has the consistency of a regular pesto but it brings in big flavor from the garlic and onion. This is a sauce that really needs a good strong piece of bread, meat or base meal component to balance out the flavor, whcih can be intense right after it is made. I recommend making this in advance and letting it sit for at least 30 minutes before the flavors really come together. It just gets better as it sits.
What can I use this on?
I would use the Garlic & Green Onion Pesto on anything that you might use regular pesto on. It is delicious on just bread, but it would also be amazing served on a pasta or a salad too. I think you could even add this to a nice steak or chicken breast and have an incredible, flavorful meal full of that lovely garlic and onion flavor.
In the photos here, I brushed extra virgin olive oil on a piece of Italian bread, added on two slices or prosciutto and then added some fresh mozzarella cheese. I broiled that for about 4 minutes until the cheese was melty with a few brown spot and then pulled it out of the oven. I slathered on the Garlic & Green Onion Pesto and ate that for lunch. It was such an easy, delicious and lighter meal!
Tips for making my Garlic & Green Onion Pesto
- Use the best quality extra virgin olive oil you can find. This is vital as it is the underlying flavor in the Garlic & Green Onion Pesto.
- I give a range for the salt in this recipe. The salt will really bring out the flavors and round it out. Don’t be afraid to taste as you go.
- It is important to use finely grated parmesan cheese in this recipe. I’ve tried using shredded and shaved and the flavor just is not the same.
- You do need a food processor to make this recipe. I recently bought a new, small one {HERE} and so far I’ve been loving it.
- This is one of those recipes that just gets better as it sits. I suggest a 30 minute rest time after making it but you can really make this up to three days in advance. Keep it in an airtight container in the refrigerator. Then make sure to remove it about 30 minutes before you want to use it to let the extra virgin olive oil come back to room temperature.
- You can keep this for up to 1 week in the refrigerator and freeze it for one month. Let it come to temperature in the refrigerator again before removing and using.

Garlic and Green Onion Pesto recipe
Equipment
- Food processor
Ingredients
- 6 green onions, very bottoms and very flimsy tops removed.
- 3 cloves of garlic
- 1/3 cup fresh parsley, packed
- 1/2 cup extra virgin olive oil
- 1 tbsp fresh squeezed lemon
- 1 tbsp red wine vinegar
- 1/3 cup pine nuts
- 1/4 cup finely grated parmesan cheese
- 1/2 - 1 tsp coarse sea salt
- 1/4 tsp fresh cracked black pepper
Instructions
- Combine all the ingredients - except the salt and pepper - in a food processor and blend.
- Once blended well, add the 1/2 tsp of coarse sea salt and fresh ground black pepper. Blend again. If desired, add the additional coarse sea salt. Blend again.
- Set aside for at least 30 minutes on the counter to let the ingredients come together.
